Pickled Cucumbers

Pickled cucumbers are the best side dish on the humid hot summer day. It’s very easy to make and goes well with almost everything. Make some and put in the fridge, I am sure this will be your favorite summer side dish.
Pickled Cucumbers
5 mini cucumbers
1 tablespoons salt
1/2 cup sesame oil
1/3 cup rice vinegar
1 tablespoon sugar
1 teaspoon crushed red peppers
4 spring onions
one handful of toasted sesame seeds
salt and pepper for seasoning
Steps:
1.Cut the cucumbers lengthwise into eighths, then cut them crosswise into 1/2 inch-long cubes. Toss with salt and let it sit for 15 minutes.
2. Drain the water.
3. In a bowl, mix together sesame oil, rice vinegar and sugar. Add the cucumbers and mix well.
4. Let sit overnight in the fridge.
5. Drain the liquid again. Toss the cucumbers with finely chopped spring onions, crushed red peppers and toasted sesame seeds.
